
Banana Streusel Muffins (A Family Favorite!)

There’s just something about a warm batch of banana muffins that makes the whole house feel like home.
One of our kids whipped up this tried-and-true recipe the other night (again!) and it’s safe to say: it never lasts long even when doubled.
The best part? Warming one up the next morning and drizzling maple syrup over the top. Yes, it’s as good as it sounds.

Banana Streusel Muffins
You’ll need:
3 ripe bananas
1/3 cup melted butter
3/4 cup sugar
1 egg, beaten
1 tsp vanilla extract
1 tsp baking soda
Pinch of salt
1 1/2 cups all-purpose flour
Streusel Topping:
1/3 cup brown sugar
2 tbsp flour
1/4 tsp cinnamon
1 tbsp butter (cold, cut into pieces)
Instructions:
Preheat oven to 375°F and line your muffin tin.
Mash bananas in a large bowl. Stir in melted butter, sugar, egg, and vanilla.
Mix in baking soda, salt, and flour until just combined.
Fill muffin cups 3/4 full.
In a small bowl, mix streusel ingredients until crumbly. Sprinkle on top of muffins.
Bake 18 minutes or until a toothpick comes out clean.
